When using a chum spreader, 4 raw shark can be cut in one game tick. This results in about 11,000 raw shark cut per hour. A chum station can be used to cut 2 per tick and an advanced chum station can be used to cut 3 per tick which results in less shark cut per hour but has lower sailing and construction requirements. The success rate of cutting raw sharks scales linearly with cooking level to 100% success rate, so 99 cooking is recommended for maximum profit.
To cut the shark, sail a boat with a chum facility to the bank boat. Bank to retrieve raw shark, which can be used on a chum facility to create the fine fish offcuts. Raw shark have a very high trade volume, making them one of the most consistently available fish to cut into offcuts.
