The temperature gauge is part of the Blast furnace minigame. It is used to monitor the temperature in the pipes when manually operating the furnace, as it will overheat if the gauge's dial is left in the red zone for too long, briefly rendering the whole furnace inoperable. Two warning signs will also protrude out of either side of the temperature gauge under certain conditions: a sign will appear on the left if one of the pipes is broken, while the one on the right indicates that the stove is low on coke.
